Matcha, sencha... Japanese tea reveals its full richness when a few essential rules are followed. Here are 5 principles to ensure your infusion is a success every time.

Principle 1

Temperature

  • Matcha : 70°C - 85°C
  • Sencha : 70°C - 95°C

Matcha can be prepared at the same temperature for all products.

For sencha, adjust according to the instructions on the packaging.

Tip : Low temperature = less bitterness, high temperature = pronounced bitterness

Principle 2

The Quantity

  • Matcha: 2-4g for 80ml of water
  • Sencha: 1-2 teaspoons (5g) for 200ml of water

Sencha specialty: 2nd and 3rd infusions possible. The 2nd infusion is often tastier (leaves are already opened).

Principle 3

Time

  • Matcha: approximately 30 seconds
  • Sencha: 50 seconds to 1 minute 20

For a lower temperature, extend the brewing time. Shorter than black tea.

These first three principles - temperature, quantity and time - vary according to the products and their use.

For matcha, our shop simplifies preparation: all our matchas follow the same parameters (80°C-90°C, 2-4g for 80ml of water, 30 seconds of whisking). Only the quantity and time change depending on whether you are preparing a traditional matcha or a matcha latte.

Principle 4

Water

  • Always use boiled water
  • Let it cool to the desired temperature
  • Soft water recommended (e.g., Volvic)
  • Do not be too much of a perfectionist about the temperature
