A melting chocolate where the botanical intensity of matcha meets the sweetness of white chocolate. A refined little treat, perfect for sharing during a relaxing moment with a Japanese tea.

Ingredients

  • 150 g white chocolate
  • 70 ml heavy cream
  • 10 g matcha powder
  • 1 pinch of salt
  • 10 g additional matcha powder for finishing

Instructions

  1. Prepare the matcha cream
    Mix the matcha with a little cream to form a smooth paste. Add the rest of the cream and the pinch of salt, then heat in a small saucepan over medium heat until simmering. Remove from heat immediately.
  2. Melt the chocolate
    Finely chop the white chocolate and melt it gently using a double boiler.
  3. Assemble the ganache
    Incorporate the matcha cream into the melted chocolate and mix well. Pour into a small mold or a dish lined with parchment paper. Let cool, then refrigerate for about 1 hour.
  4. Cut and dust
    Cut into squares of approximately 1.5 cm and lightly dust with matcha powder for the finish.

Tip

  • The little touch of salt reveals the umami of the matcha even better.
  • For a gift, you can present the squares in small paper liners or an elegant box.
  • Pairs perfectly with a Ceremonial Matcha or a Sencha Kabusecha, for a harmonious tasting moment.
