Soft + crunchy: a Japanese treat in one bite

Hidden beneath a crispy puff pastry is a soft and melt-in-the-mouth milk mochi.
These mini tarts, in a one-bite format, are perfect for tea time or to share at a snack break.
You can vary the filling to suit your tastes: azuki paste, chocolate, jam, or even almond cream, our recommendation for a refined pairing with the mochi.

Ingredients

  • Milk: 250 ml
  • Starch (potato, rice, shiratamako, etc.): 35 g
  • Sugar: 40 g
  • Puff pastry (store-bought or homemade): 1 roll
  • Filling of your choice (azuki paste, almond cream, Nutella, jam, etc.): as needed

Instructions

  1. Prepare the milk mochi
    In a saucepan, pour in the milk, starch, and sugar. Heat over low heat, stirring constantly with a spatula.
    When the dough thickens and becomes elastic like mochi, remove from the heat. Spread it out in a container dusted with starch and let it cool in the refrigerator.
  2. Prepare the tart shells
    Cut the puff pastry into 12 equal pieces and place them in mini tartlet or muffin tins. Prick the bottom lightly with a fork.
  3. Fill
    Add a little filling to the bottom (e.g., almond cream) then place a piece of milk mochi on top.
  4. Bake
    Bake in a preheated oven at 180°C (350°F) for about 15 minutes, until the pastry is golden brown.
  5. Decorate
    Dust with powdered sugar or add some chopped nuts before serving.

These mini tartlets pair wonderfully with a Hojicha or a creamy Matcha latte.
